When my kid wakes up at 4:50AM, I make DONUTS!

My youngest woke up at 4:50AM this morning.  Needless to say, I felt like making a “treat” for breakfast.  (And LOTS of coffee!)  It’s Saturday, after all!

My kids loved these and I felt that they weren’t all that terrible for them to eat!  I cut the sugar way down and honestly, I feel that with the banana and chocolate chips, you could probably omit it all together.

I got the original recipe here.  I changed a few things based on my preferences:

Ingredients:

1 cup Mashed Ripe Banana (2 small bananas)
1/8 cup Sugar
1/2 cup Full Fat Greek Yogurt
1/4 cup Unsalted Butter (Melted)
2 Eggs (Room Temperature)
1 teaspoon Vanilla Extract
2 cups Whole Wheat Pastry Flour
1 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1/4 teaspoon Salt
1/2 teaspoon Cinnamon
3/4 cup Mini Chocolate Chips

Bake at 325 degrees.

I used my stand mixer to mix the bananas, sugar and yogurt together well.  Add the rest of the ingredients in order and then fold in the chocolate chips.  I used a quart-sized Ziplock bag to pipe the mixture into my donut pan.  Bake for 12-15 min.  Mine took 15.

Jaden asked me if these were for Valentine’s Day so I said “yes”!  Bonus!  A Valentine’s treat without extra work!
